Hosted aboard an iconic Riva 44 yacht, ION at Sea is an extension of Simon Rogan's two-Michelin-starred ION Harbour, bringing world-class food and service onto the water, with the Grand Harbour and the open sea beyond.

Accommodating only two to five guests, ION at Sea offers the smallest and most exclusive chef’s table format in the region. Every detail is designed around privacy, pace, and connection.

A TEAM FROM MICHELIN-STARRED RESTAURANTS

Led by chef Charlie Wilson and restaurant manager Arsen Brahaj, ION at Sea brings the team from Simon Rogan’s one Michelin-starred Aulis Phuket to the Mediterranean for a special season in Malta.

Working closely with Simon and executive chef Oli Marlow, Charlie has created a seasonal tasting menu rooted in the produce of the Maltese islands. The experience is lead by Arsen Brahaj, recipient of Thailand’s Michelin Service Award in 2025.

Our team serves a seasonal tasting menu rooted in the produce of the Maltese islands, using ingredients from both land and sea.

Served across several courses, each dish finished and plated in front of you, with wine pairings available to add. Throughout the evening the chefs share the stories, ingredients and craft behind every course.

ION at Sea is not dinner on a yacht. It is Malta unfolding on the water through taste, sound, light and movement.

A Team from Michelin-Starred Restaurants

Led by chef Charlie Wilson and restaurant manager Arsen Brahaj, ION at Sea brings the team from Simon Rogan's one-Michelin-starred Aulis Phuket to the Mediterranean for a special season in Malta.

Working alongside Simon and executive chef Oli Marlow, Charlie has created a seasonal tasting menu rooted in the produce of the Maltese islands, extending the philosophy of the two-Michelin-starred ION Harbour onto the water. Arsen, who hosts each evening, is a recipient of Thailand's Michelin Service Award, 2025.

  • How many guests are accommodated each evening?

    Each sailing is reserved for a single party of two to five guests. There is only one booking per evening, so the yacht and crew are entirely yours.

  • Is the experience private?

    Completely.  No other guests join your evening. The whole Riva 44 is yours for the booking.

  • Are beverages included?

    Wine pairings are selected to match each course and can be added to your reservation.

    All drinks have to be pre-ordered.

  • What happens in poor weather?

    Alternative arrangements or rescheduling options will be communicated if weather conditions affect sailing.

  • Can dietary requirements be accommodated?

    Yes, with advance notice during the reservation process.

  • What is your cancellation policy?

    Kindly note that bookings are non-refundable. However, if you’re unable to attend, we will always do our best to fill the slot and assist wherever possible.
