ION at Sea is a private dining experience unlike anything else in the Mediterranean, launching Friday 19 June and running until Sunday 4 October 2026.
Hosted aboard an iconic Riva 44 yacht, ION at Sea is an extension of Simon Rogan's two-Michelin-starred ION Harbour, bringing world-class food and service onto the water, with the Grand Harbour and the open sea beyond.

Each evening is reserved exclusively for a single booking of between two and five guests, creating a chef's table experience that feels entirely personal, with uninterrupted views, genuine hospitality, and the sea all around you.

As Valletta fades into evening light, the harbour shifts into something quieter and more cinematic, defined by reflection and stillness.
ION at Sea is not dinner on a yacht. It is Malta unfolding on the water through taste, sound, light and movement.

Led by chef Charlie Wilson and restaurant manager Arsen Brahaj, ION at Sea brings the team from Simon Rogan's one-Michelin-starred Aulis Phuket to the Mediterranean for a special season in Malta.
Working alongside Simon and executive chef Oli Marlow, Charlie has created a seasonal tasting menu rooted in the produce of the Maltese islands, extending the philosophy of the two-Michelin-starred ION Harbour onto the water. Arsen, who hosts each evening, is a recipient of Thailand's Michelin Service Award, 2025.

Each sailing is reserved for a single party of two to five guests. There is only one booking per evening, so the yacht and crew are entirely yours.
Completely. No other guests join your evening. The whole Riva 44 is yours for the booking.
Wine pairings are selected to match each course and can be added to your reservation.
All drinks have to be pre-ordered.
Alternative arrangements or rescheduling options will be communicated if weather conditions affect sailing.
